In 2015, co-founders Lin Jerome and Alexandra Lourdes left their jobs in higher education at UNLV to pursue their passions and start an Interactive Marketing Company called The Refined Agency. Lin, is a graduate of UNLV’s Law School, and Alex who has her PhD in higher education, were not seen as the “typical” entrepreneurs, but as with everything they do, they love being “atypical”. The Refined Agency quickly became the go-to agency in Las Vegas for all things Interactive Marketing which included Social Media, Branding and Event curation and management.

The two saw how impactful their services were for their clients, and not to mention spent most of their days working out of coffee shops that were less than inspiring, that they decided to open a café concept of their own that met all of the unmet needs in the market. They partnered with their restauranteur husbands Steve Jerome, former restaurant GM for Wolfgang Puck and Wynn Resorts and Managing Partner of Blau and Associates, and Michael Santos former COO Raising Canes, to launch Café Lola. Our Summerlin location opened in May 2018 followed by our second location in Henderson in November 2020. The team has now created Refined Restaurant Group, which is home to Café Lola, and our sister concepts Saint Honoré Doughnuts and Beignets, Pizza Anonymous, 3 Little Chicks and LolaXO.

  • Lin Jerome, J.D. is the co-founder of Refined Restaurant Group, The Refined Agency, Café Lola, Saint Honoré Doughnuts and Beignets and 3 Little Chicks. In 2012 she obtained her Law Degree from The University of Nevada Las Vegas Boyd School of Law and in 2013 created female influencer and philanthropic group Ladies Who Dine, a group hosting quarterly events at Las Vegas’ premier restaurants and nightlife venues catering to Vegas Young Professionals. In 2015, Lin created The Refined Agency with business partner Alexandra Lourdes; an interactive marketing company specializing in social media, creative design, influencer marketing and hospitality events. As a result of the success The Refined Agency garnered through its marketing efforts for its clientele, concepts Café Lola, Saint Honoré Doughnuts and Beignets and Pizza Anonymous were created. Lin, who is also a lover of design, has played a pivotal role in designing, scouting and securing locations for all of the Refined Restaurant Group concepts. She is also the key player in seeking and procuring strategic partnerships and business development for the group. She has been featured in many publications including Medium, Authority Magazine, Entrepreneur, Travel Noiré, and was hi-lighted in the book “Hello Gorgeous” Empowering Wisdom from Bold Women to Inspire Greatness.


  • Alexandra Lourdes, Ph.D is a well known entrepreneur & the co-founder of Refined Restaurant Group, which specializes in creating unique & modern restaurant concepts that have now been widely recognized. Her restaurant brands include Café Lola, Saint Honoré Doughnuts & Beignets, Pizza Anonymous, 3 Little Chicks & an online couture gifting site LolaXO.com Alexandra is also the co-founder of The Refined Agency, a social media and interactive marketing agency in Las Vegas, NV which has created one of the largest female empowerment events in Las Vegas, called Women Who Slay. Lourdes has been featured in several publications including: Vegas Magazine, Vegas Rated, and she was featured as one of the five most empowered Women in Luxury Magazine. Lourdes has received a commendation from Mayor Goodman as well as a previous winner of the 40 under 40 award.  She also was recently featured in “The New Latina:100 Millennials Shaping Our World” which shares the stories of successful Latina’s in different fields.   Previously, Alexandra held a position as the Academic Integration Coordinator at UNLV. She earned her Ph.D. at the age of 30 years old and her dissertation research and passion involves increasing the success rate of underrepresented students in education. She has over nine years of experience within development, community relations, student retention, program development, marketing and sponsorships. She is also taking the TikTok world by storm and has amassed over 1.8 million followers who enjoy her creativity, candor, and recipes. Alexandra is also a foodie, a wife & mom to her daughters Sophie and Mila, she enjoys sharing her motherhood tips & traveling all over the world with her family.

  • Steve Jerome brings a lifetime of hospitality experience and passion to the table. A native of Auburn, New York, but a longtime Las Vegas resident, Steve is a proud graduate of UNLV receiving his Masters in Hospitality Administration in 2017. Over the past decade, he has established himself as one of Las Vegas’ rising food and beverage stars, opening and operating numerous award-winning restaurants for the likes of Wolfgang Puck, Elizabeth Blau and Steve Wynn. He has acted in the role of Managing Partner and General Manager for Blau and Associates Restaurants Andiron Steak and Sea & Honey Salt. Currently as a Partner at Refined Retaurant Group, Steve oversees culinary development and operations for the groups culinary concepts.

  • Launching the Raising Canes franchise group in Las Vegas; Santos set out to help other restaurant groups sharpen their operations. Tailored Food & Beverage works with restaurant organizations whom are looking to expand their organizational structure and market presence all while enhancing their operations. As a Partner at Refined Restaurant Group, Santos works with each department and the restaurant operators to build the sole focus of serving the guests in all they do every day.
